Therefore, in order to make the eggs less vulnerable, they are immediately cooled. This is imposed by the US health authorities. From the moment it is refrigerated, the egg should be kept at this temperature until consumption: once removed from the refrigerator, an egg should be consumed within a maximum of two hours.

In general, whether in France or abroad, it is possible to store the eggs in the refrigerator or not, provided they are not exposed to strong temperature changes, because it is precisely these temperature differences that will spoil the eggs and make them potentially harmful.
